Pixel 6 pro (android 12) owner here,
Its probably not “officially” supported by KPN. But using KPN e-sim with a google Pixel 6 phone works for me just fine , i enabled e-sim from the KPN app without any problems :)

If your Pixel 6 is bought for the Dutch/Europese market, 5G should be working. I'm not sure what happens if you use a phone that's made for the Asian market, this might make a difference.
I'm also not sure about VoLTE, but I'm going to ask the right colleague and report back to you when I've received an answer
