Are you trying to transfer your apps and setting with the Apple transfer tool?
That doesn't work for a KPN e-sim or sim to e-sim.
You'll have to use the MijnKPN app to install it on your new phone.

If you can't get the e-sim working maybe it's easier to go to a KPN store or call the KPN customer service 0800-0402 (mo to fr 08.00 - 18.00, sa 08.00 - 17.00).
